Main Ingredients
- 12 medium Yukon Gold potatoes (skins left on)
- 1/2 cup unsalted butter (cut into 1/2 inch pieces)
- 1/2 cup heavy whipping cream
- 1 tbsp kosher salt (plus more to taste)

Topping
- 2 tbsp unsalted butter
- 2 tbsp heavy cream
- 1 small bunch of chives (finely chopped, about 2–3 tablespoons)

- Prepare Potatoes: Fill a large pot 3/4 full with water and place on the stove. Clean your Yukon Gold potatoes and cut them into large quarters, keeping all pieces similar in size for even cooking.
- Boil Potatoes: Place the cut potatoes into the pot of water and bring to a boil. Add a pinch of salt once boiling, then reduce heat to medium-high and cook for about 10 minutes, or until potatoes are easily pierced with a fork and just beginning to fall apart.
- Warm Cream and Butter: While potatoes cook, combine 1/2 cup butter and 1/2 cup cream in a microwave-safe bowl. Microwave for 1-3 minutes until butter is fully melted and cream is warm. Set aside.
- Drain and Dry Potatoes: Drain the cooked potatoes and return them to the pot. Place the pot back on the warm stove (turned off burner) and toss potatoes for about a minute to help evaporate excess moisture.
- Mash Potatoes: Transfer potatoes to a large bowl. Using a potato masher, mash potatoes until mostly smooth but still slightly lumpy for texture.
- Add Cream Mixture: Pour half of the warm butter and cream mixture into the mashed potatoes and mix well using the masher. Add kosher salt, pepper, and then the remaining butter and cream mixture. Mix thoroughly.
- Adjust Seasoning: Taste the mashed potatoes and add more salt if needed, as potatoes can absorb salt during cooking.
- Prepare Butter and Chive Topping: In a small microwave-safe bowl, combine 2 tablespoons of butter and 2 tablespoons of cream. Microwave for about 1 minute until butter is melted.
- Create a Well: Using the back of a large spoon, make a swirl or small well on the surface of the mashed potatoes to hold the topping.
- Add Topping and Chives: Drizzle the melted butter and cream mixture into the well on the potatoes. Sprinkle finely chopped chives and a pinch of kosher salt on top.
- Serve: Transfer the mashed potatoes to a serving bowl and serve warm as a delicious side dish.
