Ingredients

Scale

Stuffing Mix

  • 6 Tablespoons butter (melted)
  • 1 1/2 cups chicken broth
  • 1 box stove top stuffing mix

Casserole Filling

  • 3 cups cubed leftover turkey
  • 1 10-ounce package frozen vegetables
  • 2 celery stalks (sliced thinly)
  • 1 teaspoon minced garlic
  • 10-ounce can condensed cream of chicken soup

For Serving

  • 2 cups gravy
  • 1 Tablespoon parsley (for garnish)

Instructions

  1. Preheat and prepare the baking dish: Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking dish with non-stick cooking spray to prevent sticking.
  2. Heat broth and butter: In a pot, heat the chicken broth and melted butter until it comes to a boil, ensuring the flavors meld and the stuffing will absorb the liquid properly.
  3. Prepare the stuffing: Remove the pot from heat and stir in the dry stuffing mix. Cover the pot with a lid and let it sit for 5 minutes to allow the stuffing to absorb the liquid. Afterward, fluff the stuffing gently with a fork to separate the grains.
  4. Combine casserole filling: In a separate mixing bowl, combine the cubed leftover turkey, frozen vegetables, thinly sliced celery, minced garlic, and condensed cream of chicken soup. Mix well until all ingredients are evenly incorporated.
  5. Assemble the casserole: Pour the turkey and vegetable mixture evenly into the prepared baking dish, smoothing the top. Then, layer the prepared stuffing evenly over the filling, covering it completely.
  6. Bake: Place the casserole in the preheated oven and bake for 30 to 35 minutes, or until the dish is bubbly and heated through.
  7. Garnish and serve: Remove the casserole from the oven, sprinkle the top with chopped parsley for a fresh herbaceous finish, cut into portions, and serve warm with gravy on the side.

Notes

  • Use fresh or leftover turkey; white or dark meat both work well.
  • Frozen mixed vegetables can be substituted with fresh vegetables—just sauté lightly before mixing.
  • For a crispier topping, broil the casserole for 2-3 minutes after baking.
  • Adjust the amount of gravy served on the side to personal preference.
  • This recipe can be easily doubled for larger gatherings.
