Instructions

  1. Prepare the Mushrooms: Heat a dry skillet over medium heat and add the sliced mushrooms. Cook for 5–7 minutes, stirring occasionally, until the moisture has evaporated and the mushrooms begin to brown.
  2. Sauté with Shallots and Butter: Add butter, olive oil, and the finely chopped shallot to the skillet. Continue cooking for another 5 minutes until the mushrooms are golden and the shallots are tender and fragrant.
  3. Season the Mushroom Mixture: Stir in thyme, balsamic vinegar if using, then season with salt and pepper to taste. Remove the mixture from heat and set aside.
  4. Butter the Bread: Lightly butter one side of each slice of bread. This will help achieve a crisp, golden crust when cooking.
  5. Assemble the Sandwiches: On the unbuttered side of four slices, layer a slice of Swiss cheese, then evenly distribute the mushroom mixture on top, followed by another slice of Swiss cheese.
  6. Top and Prepare for Cooking: Place the remaining bread slices on top, buttered side facing outwards, creating a sandwich.
  7. Cook the Swiss Mushroom Melt: Heat a skillet or preheat a panini press. Cook each sandwich for 2–3 minutes per side or until the bread is golden brown and the cheese is melted thoroughly.
