Cracker Dough
- 2 tablespoons unsalted butter
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon kosher salt
- 1 teaspoon Italian seasoning
- 3/4 cup sourdough discard (approximately 180 grams)
- Measure the sourdough discard: Use a digital thermometer or kitchen scale to measure 3/4 cup (180 grams) of sourdough discard into a mixing bowl.
- Combine melted butter and seasonings: Melt 2 tablespoons of unsalted butter in the microwave. Add 1/2 teaspoon granulated sugar, 1/2 teaspoon kosher salt, and 1 teaspoon Italian seasoning to the melted butter and mix thoroughly.
- Mix discard into butter mixture: Add the sourdough discard to the butter mixture and stir until the ingredients are very well combined and form a homogenous dough.
- Spread mixture on pan: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Pour the cracker dough onto the center of the parchment and use a spatula to spread it evenly in a very thin layer, reaching close to the edges of the pan.
- Bake and score: Bake the mixture for 10 minutes. Remove from oven and use a pizza cutter to slice the dough into even squares. Prick each square with a fork to prevent bubbling.
