These crispy and flavorful sourdough discard crackers are an excellent way to use up leftover sourdough starter. Infused with butter, Italian seasoning, and a touch of sugar and salt, these thin crackers bake quickly to golden perfection. Perfect for snacking or serving with dips and cheese.

Ingredients

Scale

Cracker Dough

  • 2 tablespoons unsalted butter
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon kosher salt
  • 1 teaspoon Italian seasoning
  • 3/4 cup sourdough discard (approximately 180 grams)

Instructions

  1. Measure the sourdough discard: Use a digital thermometer or kitchen scale to measure 3/4 cup (180 grams) of sourdough discard into a mixing bowl.
  2. Combine melted butter and seasonings: Melt 2 tablespoons of unsalted butter in the microwave. Add 1/2 teaspoon granulated sugar, 1/2 teaspoon kosher salt, and 1 teaspoon Italian seasoning to the melted butter and mix thoroughly.
  3. Mix discard into butter mixture: Add the sourdough discard to the butter mixture and stir until the ingredients are very well combined and form a homogenous dough.
  4. Spread mixture on pan: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper. Pour the cracker dough onto the center of the parchment and use a spatula to spread it evenly in a very thin layer, reaching close to the edges of the pan.
  5. Bake and score: Bake the mixture for 10 minutes. Remove from oven and use a pizza cutter to slice the dough into even squares. Prick each square with a fork to prevent bubbling.
  6. Finish baking: Return the pan to the oven and bake for another 15-25 minutes or until the crackers are golden and crisp. Monitor closely and remove individual crackers as they become golden to avoid burning, especially if your oven heats unevenly.
  7. Store the crackers: Once fully cooled, store the crackers in an airtight container at room temperature. They will stay fresh for up to 2 days, or longer if kept well sealed.

Notes

  • Ensure the cracker dough is spread very thinly for optimal crispness.
  • Use parchment paper to prevent sticking and facilitate easy clean-up.
  • Adjust seasoning according to your taste—add garlic powder or chili flakes for a spicy twist.
  • Watch oven timing carefully as crackers can burn quickly once golden.
  • These crackers are a great way to reduce waste by using sourdough discard.
