Soft Gluten Free Cookies Recipe

4.6 from 96 reviews

These Soft Gluten Free Cookies offer a delightful combination of peanut butter flavor and a tender, chewy texture. Made with PBFit peanut butter powder and almond flour, these cookies are a healthier alternative to traditional peanut butter cookies, naturally gluten free and lightly sweetened with honey. Perfect for a guilt-free treat that’s easy to prepare and bake.

Ingredients

Scale

Wet Ingredients

  • 2 tablespoons water
  • 1/4 cup honey
  • 1/2 teaspoon vanilla extract
  • 1 egg

Dry Ingredients

  • 3/4 cup PBFit peanut butter powder (divided: 1/4 cup and 1/2 cup)
  • 1 cup almond flour
  • 1/4 teaspoon baking soda

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper to prevent sticking and ensure even baking.
  2. Mix Peanut Butter Base: In a large mixing bowl, combine 1/4 cup of PBFit peanut butter powder with 2 tablespoons water, stirring until fully incorporated to create a smooth base.
  3. Add Remaining Ingredients: To the bowl, add 1/2 cup PBFit powder, 1 cup almond flour, 1/4 teaspoon baking soda, 1/4 cup honey, 1/2 teaspoon vanilla extract, and 1 egg. Mix all ingredients thoroughly until a uniform dough forms.
  4. Form Cookie Dough Balls: Using your hands or a spoon, scoop the dough and form 1-inch diameter rounds. Place each ball at least 2 inches apart on the parchment-lined cookie sheet to allow for spreading during baking.
  5. Flatten & Decorate: Gently flatten each dough ball to about 2 inches in diameter and 1/4 inch thick. Use a fork to press a crisscross pattern onto the tops of the cookies for the classic peanut butter cookie look.
  6. Bake Cookies: Place the cookie sheet in the preheated oven and bake for 7 to 9 minutes, until the edges are set but the centers remain soft.
  7. Cool Cookies: Remove the cookies from the oven and allow them to cool on the cookie sheet for 5 to 10 minutes. This helps them firm up before transferring to a wire rack to cool completely.

Notes

  • For best results, do not overbake; cookies should be soft and slightly chewy.
  • If you prefer a sweeter cookie, you can add an extra tablespoon of honey.
  • Make sure to space cookies well apart as they will spread slightly during baking.
  • Store cookies in an airtight container at room temperature for up to 5 days.
  • This recipe is naturally gluten free and dairy free.
