Ingredients

Scale

Vegetables

  • 3 pounds baby potatoes, halved (or 78 cups peeled and cubed red or russet potatoes)
  • 1 pound green beans, cut into 3-inch pieces (fresh, frozen, or canned, drained if canned)

Meat

  • 1 pound smoked sausage, sliced (45 links)

Seasonings and Others

  • 1 package ranch seasoning
  • 3 teaspoons Cajun seasoning (store-bought or homemade)
  • 1 cup beef broth
  • 6 tablespoons butter, sliced into 6 pieces

Instructions

  1. Prepare Ingredients: Halve the baby potatoes or peel and cube the red or russet potatoes. Slice the smoked sausage into 4-5 links and cut the green beans into 3-inch pieces if fresh or thawed if frozen. Drain green beans if using canned.
  2. Combine in Slow Cooker: Add the potatoes, sliced smoked sausage, and green beans into a 6-quart slow cooker.
  3. Add Seasonings: Sprinkle the ranch seasoning and Cajun seasoning evenly over the ingredients in the slow cooker.
  4. Add Broth and Mix: Pour one cup of beef broth over the ingredients, then gently stir to coat the sausage and veggies with the seasoning mixture.
  5. Top with Butter: Place six slices of butter evenly on top of the vegetables and sausage mixture to add richness during cooking.
  6. Cook: Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours. Cook until the potatoes are tender and easily pierced with a fork.
  7. Serve: Once cooked, serve the swamp potatoes immediately while hot for the best flavor and texture.

Notes

  • Using baby potatoes keeps the dish more rustic but cubed potatoes work well too.
  • Adjust the Cajun seasoning amount to control spiciness level.
  • Frozen green beans are a convenient alternative to fresh or canned.
  • For a vegetarian option, omit sausage and use vegetable broth instead of beef broth.
  • Leftovers keep well in the fridge for up to 3 days and reheat nicely.
