Ingredients

Scale

Main Ingredients

  • 23 lbs beef sirloin tip roast
  • 3 tbsp butter
  • 1 1/2 lbs Yukon gold potatoes
  • 1 lb carrots
  • 1 sweet onion

Liquid and Seasoning Mixture

  • 1/2 cup beef stock
  • 1/2 cup apple juice
  • 1/2 cup tomato juice
  • 2 tbsp Worcestershire sauce
  • 2 tbsp corn starch
  • 2 tsp onion flakes
  • 2 tsp Herbs de Provence
  • 1 1/2 tsp salt
  • 1 tsp parsley
  • 1 tsp garlic powder
  • 1 tsp black pepper

Instructions

  1. Prepare the Butter Base: Slice the butter thinly and arrange it evenly at the bottom of the slow cooker insert to provide flavor and moisture.
  2. Add Potatoes: Wash the Yukon gold potatoes thoroughly and place them on top of the butter layer inside the slow cooker.
  3. Layer Carrots and Onion: Peel and cut the carrots and sweet onion into chunks. Layer these vegetables over the potatoes in the slow cooker.
  4. Place the Roast: Position the sirloin tip roast on top of the layered potatoes, carrots, and onions.
  5. Mix the Cooking Liquid: In a microwave-safe bowl or glass measuring cup, whisk together the beef stock, apple juice, tomato juice, Worcestershire sauce, and corn starch. Add the onion flakes, Herbs de Provence, salt, parsley, garlic powder, and black pepper to the mixture, ensuring it’s well combined.
  6. Activate the Corn Starch: Microwave the mixed liquid for about 90 seconds to dissolve and activate the corn starch, thickening the cooking broth.
  7. Pour Over Roast and Vegetables: Carefully pour the prepared liquid mixture over the roast and vegetables inside the slow cooker.
  8. Cook Low and Slow: Cover with the lid and cook on LOW heat for 8 to 10 hours, or until the roast becomes fall-apart tender and the vegetables are cooked through.

Notes

  • For best results, use a sirloin tip roast between 2 and 3 pounds to ensure even cooking.
  • Yukon gold potatoes are preferred for their creamy texture but can be substituted with red potatoes.
  • You can adjust salt according to your dietary preferences or needs.
  • If you don’t have a microwave, gently warm the liquid mixture in a small saucepan on the stovetop while stirring to dissolve the corn starch.
  • This recipe pairs well with a side of steamed green beans or a fresh salad for a complete meal.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
