Slow Cooker Lasagna Soup is a hearty and comforting meal that combines the rich flavors of classic lasagna into a warm, easy-to-make soup. Packed with Italian sausage, tomato sauce, diced tomatoes, and tender noodles, this slow-cooked dish is perfect for cozy dinners and can be whipped up with minimal effort.

Ingredients

Scale

Main Ingredients

  • 1 lb ground Italian sausage
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 (30 oz) can tomato sauce
  • 1 (15 oz) can diced tomatoes
  • 1 (32 oz) carton chicken broth
  • 12 oz box bow tie noodles or break-apart lasagna noodles
  • Salt and pepper to taste

For Serving

  • Sour cream
  • Shredded mozzarella cheese

Instructions

  1. Cook the Sausage: In a skillet over medium-high heat, cook the ground Italian sausage, breaking it apart with a spoon as it browns and cooks thoroughly.
  2. Combine Ingredients in Slow Cooker: Transfer the cooked sausage to the slow cooker. Add diced onion, minced garlic, tomato sauce, diced tomatoes, and chicken broth. Stir well to combine all ingredients.
  3. Start Slow Cooking: Cover with the lid and cook on low heat for 6 to 8 hours, or on high heat for 3 to 4 hours to allow flavors to meld.
  4. Adjust Heat and Add Noodles: One hour before finishing, set the slow cooker to high. Then, about 30 minutes before serving, stir in the noodles into the soup. Check every 15 minutes until noodles are tender but not overcooked.
  5. Serve: Ladle the lasagna soup into bowls. Top each serving with a dollop of sour cream and shredded mozzarella cheese. Serve immediately, optionally with Olive Garden copycat breadsticks for a complete meal.

Notes

  • You can substitute ground beef or turkey for Italian sausage if preferred.
  • If you want a vegetarian version, omit the sausage and use vegetable broth instead of chicken broth, and add more vegetables like mushrooms and bell peppers.
  • Bow tie noodles or broken lasagna noodles are recommended; other pasta shapes might alter the texture.
  • Check noodles frequently during the last 30 minutes to prevent overcooking.
  • For a spicier soup, add red pepper flakes along with the garlic.
  • Leftover soup can be refrigerated for up to 3 days or frozen for up to 2 months.
