Ingredients

Scale

Main Ingredients

  • 5 cans (15.25 ounces each) corn kernels, drained
  • 2 cups (226 g) sharp cheddar cheese, shredded
  • 1 cup (113 g) pepper jack cheese, shredded
  • 2 medium jalapeño peppers, seeded and diced (about ⅓ cup)
  • ½ cup (122.5 g) whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • ¼ cup (½ stick / 57 g) unsalted butter, cubed
  • 1 package (8 ounces) cream cheese, cubed
  • 8 slices thick-cut bacon, cooked and crumbled

Instructions

  1. Prepare Ingredients: Drain the corn kernels from the cans and seed and dice the jalapeño peppers to measure about ⅓ cup.
  2. Combine in Slow Cooker: In the bowl of your slow cooker, add the drained corn, shredded sharp cheddar, shredded pepper jack cheese, diced jalapeños, whole milk, garlic powder, kosher salt, and ground black pepper. Stir well to evenly combine all ingredients.
  3. Add Butter and Cream Cheese: Top the mixture with the cubed unsalted butter and cream cheese. Do not stir these in yet; placing them on top allows for gradual melting and creamy texture.
  4. Cook: Cover the slow cooker with the lid and cook the mixture on high for 2 hours or on low for about 4 hours, allowing cheeses and butter to melt and meld with the corn creating a rich creamed texture.
  5. Add Bacon: Once cooking time is complete, immediately add the cooked and crumbled thick-cut bacon into the slow cooker. Stir to combine the bacon evenly throughout the creamed corn mixture.
  6. Serve Warm: Transfer portions to serving dishes and enjoy your warm and cheesy jalapeño popper creamed corn, perfect for holiday meals or comfort food nights.

Notes

  • For less heat, reduce the number of jalapeños or omit the seeds.
  • You can substitute the bacon with turkey bacon for a leaner option.
  • Use full-fat cream cheese and whole milk for the creamiest result.
  • This dish can be kept warm in the slow cooker on the ‘keep warm’ setting for up to an hour before serving.
  • Leftovers store well in the refrigerator for up to 3 days and reheat gently on the stove or in the microwave.
