Ingredients

Scale

Main Ingredients

  • 1 lb. ground beef
  • 1 cup white onion, diced
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. garlic powder
  • 21.5 oz. cream of mushroom soup (two 10.75 oz cans, do not add water)
  • 15.25 oz. can corn, drained well
  • 1 1/2 lbs. russet potatoes (about 5 cups diced, cut into small 1/2 inch cubes, skin left on)
  • 2 cups shredded sharp cheese, divided

Instructions

  1. Brown the beef and onion: In a large skillet over medium-high heat, cook the ground beef and diced white onion together until the beef is browned and fully cooked. Drain the excess fat to prevent greasiness in the final dish.
  2. Prepare the slow cooker: Wash and dry the russet potatoes. Cut them into small 1/2 inch cubes keeping the skin on for texture and nutrition. Add the potatoes to the slow cooker. Next, pour in the cooked ground beef and onion mixture.
  3. Add remaining ingredients: To the slow cooker, add the cream of mushroom soup, salt, pepper, garlic powder, drained corn, and half of the shredded sharp cheddar cheese. Stir everything together until well combined, then spread the hash out into an even, flat layer for uniform cooking.
  4. Slow cook: Cover the slow cooker with its lid and cook on LOW for 5 hours. Avoid opening the lid during this cook time to maintain the heat and ensure the potatoes cook through properly.
  5. Add cheese topping: After 5 hours, sprinkle the remaining shredded sharp cheddar cheese evenly over the top of the hash. Cover again and let the cheese melt for about 10 minutes before serving.

Notes

  • Do not add water to the cream of mushroom soup when mixing; it is meant to be used undiluted for creamy texture.
  • Leaving the potato skins on adds extra nutrients and a rustic texture, but you can peel the potatoes if preferred.
  • For a spicier twist, consider adding a pinch of cayenne pepper or chopped jalapeños during step 3.
  • If you want to make this dish gluten-free, ensure the cream of mushroom soup you use is labeled gluten-free.
  • This recipe pairs well with a simple green salad or steamed vegetables for a balanced meal.
