Ingredients

Scale

Bread

  • 1 baguette, sliced into ½-inch thick pieces

Sardine Topping

  • 1 can (4 ounces) sardines in olive oil, drained
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1 clove garlic, halved
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, finely chopped
  • Additional olive oil for drizzling

Serving

  • Lemon wedges for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for toasting the baguette slices.
  2. Prepare Baguette: Arrange the sliced baguette pieces on a baking sheet and brush them lightly with olive oil to help them crisp up in the oven.
  3. Toast Bread: Bake the bread slices for 5-7 minutes until they are golden and crispy. Once done, remove them from the oven and set aside.
  4. Mix Sardine Topping: In a bowl, combine the drained sardines, 2 tablespoons of olive oil, fresh lemon juice, lemon zest, salt, and pepper. Mix gently until the sardines are chunky but combined with the other ingredients.
  5. Garlic Rub: Rub the halved garlic clove over the toasted baguette slices to impart a subtle garlic flavor.
  6. Assemble Crostini: Generously spoon the sardine mixture on top of each toasted bread slice.
  7. Garnish and Serve: Sprinkle the crostini with finely chopped fresh parsley and drizzle additional olive oil over the top. Serve immediately with lemon wedges on the side for extra zest.

Notes

  • For an added kick, sprinkle a pinch of red chili flakes on the sardine topping.
  • You can use other fresh herbs like dill or chives if parsley is unavailable.
  • Serve the crostini warm or at room temperature for best flavor.
  • Make sure to drain the sardines well to avoid soggy crostini.
  • These crostini pair perfectly with a crisp white wine or light beer.
