  • 1 cup Panko Breadcrumbs (ordinary breadcrumbs can be used)
  • 1 large Onion (grated)
  • 2 cloves Garlic (minced)
  • 1 large Egg (beaten)
  • 2 tablespoons Ketchup
  • 1 tablespoon Worcestershire Sauce
  • 1 tablespoon Dijon Mustard (can swap with any smooth mustard)

Gravy Ingredients

  • 2 tablespoons Olive Oil (for browning meatballs)
  • 2 tablespoons Butter
  • 8 ounces White Mushrooms (sliced)
  • 2 cups Beef Stock (low sodium preferred)
  • 2 tablespoons Flour (for thickening the gravy)

Instructions

  1. Prepare Breadcrumb Mixture: In a large mixing bowl, grate one onion directly over 1 cup of panko breadcrumbs. Combine thoroughly and let soak for about 5 minutes to soften the breadcrumbs and infuse onion flavor.
  2. Mix Meatball Ingredients: Add 1 pound of ground beef, 2 minced garlic cloves, 1 beaten egg, 2 tablespoons of ketchup, 1 tablespoon of Worcestershire sauce, and 1 tablespoon of Dijon mustard to the breadcrumb mixture. Mix all the ingredients by hand until fully combined.
  3. Form Meatballs: Using an ice cream scoop, portion out the meat mixture into 20 to 22 equal servings. Roll each portion gently into round meatballs to ensure even cooking.
  4. Brown Meatballs: Heat 2 tablespoons of olive oil in a large skillet over high heat. Add the meatballs and brown them for about 2-3 minutes on each side until a crust forms, but they are not cooked through yet. Remove from skillet and set aside.
  5. Sauté Mushrooms: In the same skillet, melt 2 tablespoons of butter. Add 8 ounces of sliced white mushrooms and sauté for 4-5 minutes until they release their moisture and start to brown.
  6. Make Gravy: Pour in 2 cups of beef stock to the skillet with mushrooms. Mix 2 tablespoons of flour with a little water to form a slurry, then add it to the skillet. Stir continuously until the gravy thickens and becomes smooth.
  7. Simmer Meatballs: Return the browned meatballs to the skillet with the gravy. Reduce heat to low and simmer for about 5 minutes, allowing the meatballs to finish cooking and absorb the flavors of the gravy.
