Crust and Seasoning

  • 1 tablespoon Butter (softened, not melted)
  • ½ tablespoon Olive Oil
  • ¼ teaspoon Salt
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Italian Seasoning (plus extra for topping, optional)
  • Pinch of Black Pepper
  • Cooking Spray (or oil, to grease the tins)
  • 8 Refrigerated Biscuits (16 ounce package)

Filling

  • ¼ cup Pasta Sauce or Pizza Sauce (use a meatless variety)
  • 3 ounces Pepperoni (chopped)
  • 78 ounces Shredded Mozzarella Cheese

Instructions

  1. Prepare your muffin tins: Preheat your oven to 350°F (175°C). Lightly spray or oil your muffin pans with cooking spray or oil. If using individual foil muffin cups, place them on a sheet pan for stability and easier handling.
  2. Mix the seasoning butter: In a small bowl, stir together the softened butter, olive oil, salt, garlic powder, Italian seasoning, and black pepper until well combined.
  3. Form biscuit crusts: Open the package of refrigerated biscuits and separate them. Place each biscuit into a muffin tin cup. Gently press and mold the biscuit dough so that it evenly covers the bottom and sides of the cup. Continue pressing until the biscuit fits snugly.
  4. Prick the biscuit dough: Using a fork, prick the bottom and sides of each biscuit crust a few times. This helps prevent bubbling during baking.
  5. Brush with seasoning and sauce: Brush the inside of each biscuit crust with the prepared butter seasoning mixture. Then lightly brush inside with about half a heaping teaspoon of pasta or pizza sauce.
  6. Add the filling: Fill each biscuit cup with 1 heaping tablespoon of shredded mozzarella cheese, then add ½ heaping tablespoon of chopped pepperoni on top. Repeat by adding another tablespoon of cheese and ½ tablespoon of pepperoni to each cup.
  7. Optional seasoning: Sprinkle a pinch of Italian seasoning on top of the fillings if desired for extra flavor.
  8. Bake the pot pies: Place the muffin tins (or foil cups on a sheet pan) into the preheated oven. Bake for 20-23 minutes, until the biscuit edges are golden brown and the cheese is melted and bubbly.
  9. Serve and enjoy: Carefully remove the pot pies from the muffin tins. Serve warm on a platter or in their individual tins for a fun presentation.
