Ingredients

Scale

Oysters

  • 12 pieces Fresh Oysters (Shucked)

Miso Mayonnaise Sauce

  • 0.75 cups Japanese Mayonnaise (Or substitute with regular mayonnaise and lemon juice)
  • 2 tablespoons Miso Paste (Light or dark miso)
  • 1 tablespoon Mirin (Sweet rice wine)
  • 5 dashes Hot Sauce (Adjust based on spice tolerance)
  • 2 tablespoons Fresh Lemon Juice (Opt for fresh juice for best flavor)

Additional Ingredients

  • 1.5 cups Fresh Spinach (Shredded or chiffonade)
  • 0.5 cups Cheddar or Mozzarella Cheese (About 2 oz; leave out for a dairy-free version)
  • Extra Lemon Wedges (For a zesty finish)
  • Parsley (For color and freshness)
  • Paprika (For flavor and presentation)

Instructions

  1. Preheat Broiler or Grill: Preheat your oven’s broiler or BBQ grill to high heat, approximately 425°F (220°C), to ensure a hot cooking environment for quick broiling.
  2. Prepare Baking Sheet: Arrange the shucked oyster shells or ramekins on a baking sheet. To keep them stable during cooking, spread rock salt beneath the shells to prevent tipping.
  3. Make Miso Mayonnaise Sauce: In a mixing bowl, combine the Japanese mayonnaise, miso paste, mirin, hot sauce, and fresh lemon juice. Stir thoroughly until the mixture becomes smooth and creamy.
  4. Add Spinach and Oysters: Lay a bed of shredded or chiffonade fresh spinach inside each oyster shell. Then, place a shucked oyster on top of the spinach.
  5. Top with Sauce and Cheese: Spoon the prepared miso mayonnaise over each oyster generously. Sprinkle the cheese evenly over the top if using.
  6. Broil: Place the baking sheet under the preheated broiler or grill. Broil for 5 to 8 minutes, or until the topping is bubbly and lightly golden.
  7. Cool and Garnish: Remove from heat and let cool for about 5 minutes. Garnish with lemon wedges, parsley, and a dusting of paprika to add color and fresh flavor before serving.

Notes

  • Use fresh oysters for the best flavor and safety.
  • Adjust the amount of hot sauce according to your spice preference.
  • For a dairy-free version, omit the cheese or use a dairy-free alternative.
  • Rock salt under oyster shells helps to keep them stable while broiling.
  • Serve immediately after broiling for optimal taste and texture.
