Dressing

  • 1 teaspoon dried mint
  • 1 garlic clove, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Cook the Pasta: Bring a large pot of heavily salted water to a rolling boil. Add the fusilli pasta and cook based on the package instructions until al dente. Drain the pasta and rinse thoroughly under cold running water until completely cooled to stop the cooking process and prevent sticking. Set aside.
  2. Prepare the Dressing: In a large serving bowl, whisk together olive oil, red wine vinegar, Dijon mustard, oregano, dried mint, minced garlic, salt, and black pepper until the dressing is well emulsified and smooth.
  3. Toss the Salad: Add the cooled pasta on top of the dressing in the bowl and toss well to evenly coat the pasta with the dressing. Then add diced cucumber, halved cherry tomatoes, baby spinach, sliced red onion, crumbled feta cheese, and halved kalamata olives. Toss gently yet thoroughly until all ingredients are evenly coated and combined.
