Chickpeas

  • 2 (15 oz) cans chickpeas, drained, rinsed and patted dry
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Shrimp

  • 1 1/2 pounds large shrimp, peeled and deveined
  • 1 Tbsp olive oil
  • 2 Tbsp lemon juice (about 1 lemon)
  • 1 tsp lemon zest
  • 3 cloves garlic, minced
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1/2 tsp red pepper flakes (optional)
  • 1/3 cup parsley, chopped

Instructions

  1. Preheat oven: Preheat your oven to 400 degrees Fahrenheit to prepare for roasting the chickpeas.
  2. Prepare chickpeas: Rinse and drain the chickpeas, then pat them dry with a paper towel to remove excess moisture. Toss chickpeas with 1 tablespoon olive oil, 1 tablespoon lemon juice, garlic powder, salt, and black pepper to evenly coat.
  3. Roast chickpeas: Spread the chickpeas in an even layer on a large sheet pan. Bake at 400 degrees F for 20 minutes. For extra crispiness, bake an additional 5 to 10 minutes.
  4. Marinate shrimp: While chickpeas are roasting, place shrimp in a large bowl and toss with 1 tablespoon olive oil, 2 tablespoons lemon juice, minced garlic, lemon zest, black pepper, salt, paprika, and red pepper flakes if using. Let shrimp marinate for 10 to 15 minutes.
  5. Combine and roast shrimp with chickpeas: When chickpeas are done roasting, spread marinated shrimp over them on the sheet pan. Optionally place lemon slices on top for extra flavor. Return the sheet pan to the oven and roast for 8 to 10 minutes, until shrimp turn pink and opaque.
  6. Finish and garnish: Remove from oven and immediately squeeze a little extra lemon juice over the shrimp and chickpeas. Garnish with freshly chopped parsley before serving.

  • For spicier dish, increase red pepper flakes to taste or add a pinch of cayenne.
  • Roasted chickpeas can be made ahead and stored separately to keep crispiness.
