  • 1 teaspoon dried basil
  • Kosher salt and freshly ground black pepper, to taste

Meat Mixture

  • 1 Tablespoon olive oil
  • 1/2 cup onion, chopped
  • 1 pound ground beef (not too lean) or ground sausage
  • 34 cups baby spinach
  • Kosher salt and freshly ground black pepper, to taste

Cheese Filling

  • 1 1/2 cup cottage cheese (2% fat)
  • 1 1/2 cup shredded mozzarella cheese, divided
  • 3/4 cup parmesan cheese, divided
  • 1 large egg

Other Ingredients

  • 10 oz. lasagna noodles (approximately 12 whole noodles)

Instructions

  1. Make marinara sauce: In a large pot, heat 1-2 tablespoons olive oil over medium heat. Add diced onion and sauté for 4-5 minutes until soft and translucent. Add diced garlic, dried Italian seasoning, dried basil, salt, and pepper, stirring for about a minute. Stir in the fire-roasted crushed tomatoes, diced tomatoes, tomato paste, chicken broth, and granulated sugar. Bring to a boil over medium-high heat, then reduce heat to a simmer and cook for 20-25 minutes until the sauce thickens slightly.
  2. Boil noodles: Bring a large pot of salted water to a boil. Add lasagna noodles and cook until al dente, about 8-10 minutes. Drain noodles and lay them flat on a clean kitchen towel to cool, preventing them from sticking together.
  3. Cook meat mixture: In a medium pot, heat 1 tablespoon olive oil over medium heat.   6. Assemble casserole: Preheat oven to 350°F (175°C). Spread about 3/4 cup marinara sauce on the bottom of a 9×13 inch casserole dish. Sprinkle with the remaining 1 cup shredded mozzarella and 1/2 cup freshly grated parmesan cheese.
