This Keto Chili Dog Casserole is a low-carb comfort food favorite, combining savory chili-spiced ground beef, juicy hot dogs wrapped in low-carb tortillas, and melted cheddar cheese into a hearty, satisfying bake. Perfect for keto dieters and anyone craving a gluten-free twist on classic chili dogs.

Ingredients

Scale

For the Chili Base

  • 1 pound ground chuck, cooked and drained well
  • 1 (14.5 ounce) can petite diced tomatoes
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 cup water

For the Casserole Assembly

  • 8 hot dogs
  • 8 low carb tortillas or wraps
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the Oven: Preheat your oven to 350 degrees Fahrenheit. While it heats up, spritz a 9×13 inch casserole dish with nonstick cooking spray to prevent sticking.
  2. Prepare the Chili Base: In a medium saucepan, combine the cooked ground chuck with petite diced tomatoes, water, and dry seasonings. Bring the mixture to a boil over medium-high heat, then reduce heat to medium-low and cook while stirring occasionally for about 8 to 10 minutes until slightly thickened.
  3. Assemble the Casserole: Spoon about ½ cup of the chili sauce into the bottom of the prepared baking dish. Roll each hot dog in a low carb tortilla, then place them seam-side down in the sauce at the bottom of the dish.
  4. Add Sauce and Cheese: Pour any remaining chili sauce over the rolled hot dogs. Top your casserole generously with shredded cheddar cheese for that delightful melty finish.
  5. Bake: Bake in your preheated oven for about 30 to 35 minutes or until the center is set and cheese is bubbling.
  6. Serve: Once baked, let it cool slightly before serving. Enjoy with your choice of hotdog toppings like pickles, mustard, or sauerkraut!

Notes

  • Drain excess fat from cooked ground chuck to keep the casserole from becoming greasy.
  • Use low carb tortillas to keep this recipe keto-friendly.
  • Feel free to add your favorite keto-friendly hot dog toppings after baking for added flavor.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • For extra spice, consider adding a pinch of cayenne pepper or chopped jalapeños to the chili base.
