Ground Turkey and Seasonings
- 2½ lb ground turkey
- 1 tsp salt
- 1 tsp pepper
- 1 tsp chili powder
- 1 tsp oregano
- ½ tsp paprika
- 1 tsp onion powder
- ½ tsp basil
- 2 tsp garlic (minced or powder)
Vegetables and Veggie Seasonings
- ½ yellow onion, diced
- 2 zucchini, chopped
- 2 bell peppers, chopped
- 1 tsp garlic salt
- ½ tsp garlic powder
- 1 tsp onion powder
- 1 tsp oregano
- ½ tsp basil
- ½ tsp chili powder
- ¼ tsp paprika
Additional Ingredients
- 6 oz tomato paste
- ½ cup water
- 1 tbsp olive oil
- Parmesan cheese, for topping (optional)
- Garlic bread or rice, for serving (optional)
- Brown the Ground Turkey: In a large saucepan over medium-high heat, brown the ground turkey until fully cooked, breaking it apart as it cooks. Drain any excess water or fat. Add the turkey seasonings (salt, pepper, chili powder, oregano, paprika, onion powder, basil, garlic) and stir well to combine. Remove the seasoned turkey from the pan and set aside.
- Sauté Onion and Garlic: Drizzle 1 tablespoon of olive oil into the same pan. Add the diced onion and minced garlic. Cook for about 3 minutes or until the mixture becomes fragrant and the onions start to soften.
- Cook the Vegetables: Add the chopped zucchini and bell peppers to the pan. Cook for 2 to 3 minutes, then add the veggie seasonings (garlic salt, garlic powder, onion powder, oregano, basil, chili powder, paprika). Continue cooking until the vegetables reach your desired tenderness, about 5 more minutes.
- Combine Turkey and Sauce: Return the browned ground turkey to the skillet with the vegetables. Reduce the heat to medium-low. Stir in the tomato paste and water thoroughly. Allow the mixture to simmer gently for about 5 minutes, letting the flavors meld together.
- Serve: Optionally, top the skillet with Parmesan cheese if not avoiding dairy. Serve the dish alongside garlic bread or over a bed of rice for a complete meal.
Notes
- You can adjust the seasoning to your taste, adding more chili powder for extra heat.
- Use lean ground turkey for a healthier, lower-fat dish.
- For a dairy-free version, omit the Parmesan cheese topping.
- The vegetables can be substituted with other favorites like mushrooms or spinach.
- Leftovers store well in the refrigerator for up to 3 days.
