Instructions

  1. Activate the yeast: In a small bowl, combine the warm water, active dry yeast, and sugar. Let the mixture sit for about 5 minutes until it becomes frothy, indicating the yeast is active.
  2. Make the dough: In a large bowl, mix the all-purpose flour and salt. Add the frothy yeast mixture and olive oil. Knead the dough until smooth and elastic, about 8-10 minutes by hand or 5-7 minutes with a stand mixer. Cover the dough and let it rise in a warm place for 1 hour or until doubled in size.
  3. Prepare garlic butter: Combine the minced garlic with the melted butter in a small bowl and set aside. This mixture will be used to brush the breadsticks before and after baking.
  4. Shape the breadsticks: Once the dough has risen, roll it out on a lightly floured surface into a large rectangle approximately 12×16 inches. Brush the entire surface with half of the garlic butter. Sprinkle the shredded mozzarella cheese evenly over the dough. Roll the dough tightly into a log shape, starting from one of the longer edges.
