Ingredients

Scale

Dough Ingredients

  • 4 1/2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 3 1/2 cups plus 1 tablespoon all-purpose flour
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk, warmed to 110°F
  • 1 large egg, room temperature
  • 1 beaten egg, for brushing the tops

Finishing Garlic Butter

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt, for finishing

Instructions

  1. Prepare the Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan to prevent the rolls from sticking during baking and set aside.
  2. Make Garlic Butter for Dough: Melt 4 1/2 tablespoons unsalted butter in a small pot, stir in 2 tablespoons minced garlic, and cook over low heat for 1 to 2 minutes until fragrant. Remove from heat and let cool.
  3. Mix and Knead the Dough: In a stand mixer bowl, combine the flour, chopped parsley, sugar, instant yeast, and sea salt. Add the warmed milk at 110°F, room temperature egg, and cooled garlic butter mixture. Knead with a dough hook on low speed for 10-12 minutes until smooth and slightly tacky, adding flour by tablespoon if too sticky.
  4. Shape the Rolls: Divide the dough into 12 equal portions (about 67 grams each). Shape each into a smooth ball by pinching the seams closed and arrange evenly in the prepared pan.
  5. Let the Dough Rise: Cover the pan with plastic wrap or a clean kitchen towel and place in a warm spot to double in size, about 1 to 2 hours.
  6. Preheat the Oven: Once risen, preheat your oven to 350°F (180°C).
  7. Apply Egg Wash and Bake: Brush the tops of the rolls with the beaten egg to give a glossy finish. Bake for 20 to 30 minutes until golden brown and hollow sounding when tapped.
  8. Prepare Garlic Butter for Finishing: While baking, melt 2 tablespoons butter and add 1 tablespoon minced garlic. Cook for 1 to 2 minutes until fragrant. Remove from heat and stir in chopped parsley.
  9. Brush and Serve: Immediately after baking, brush rolls generously with the garlic butter mixture and sprinkle with flaky sea salt if desired. Serve warm for best taste.

Notes

  • Use room temperature ingredients for best dough texture.
  • If dough is sticky, add flour gradually to avoid dense rolls.
  • Letting the dough rise adequately ensures soft, fluffy rolls.
  • Adjust baking time slightly if your oven runs hot or cold.
  • Flaky sea salt is optional but adds a delightful crunchy finish.
  • Store leftover rolls in an airtight container and reheat gently before serving.
