Wet Ingredients
- 1 cup butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 tablespoon vanilla extract
- 2 eggs
Dry Ingredients
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Add-ins
- 2 cups butterscotch chips
- Preheat Oven and Prepare Wet Ingredients: Preheat your oven to 350°F (175°C). In a medium to large mixing bowl, add 1 cup of softened butter. Then, add 1/2 cup of sugar, 1/2 cup of brown sugar, and 1 tablespoon of vanilla extract. Cream the butter and sugars together until they are well combined and thick, scraping down the sides of the bowl as needed.
- Add Eggs: Add 2 eggs to the creamed mixture, one at a time. Mix gently after each addition until just incorporated to ensure the eggs are evenly distributed throughout the mixture.
- Combine Dry Ingredients: In a separate bowl, combine 2 1/4 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Mix these dry ingredients well to ensure even distribution of the baking soda and salt.
- Mix Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing by hand with a spatula until just combined. Be careful not to over mix, as this can result in tough cookies. Once the dough is formed, gently fold in 2 cups of butterscotch chips with the spatula.
- Portion and Bake: Use a cookie scoop to portion out about 1 tablespoon of dough for each cookie. Place the dough balls approximately 2 inches apart on a nonstick baking sheet to allow room for spreading. Bake in the preheated oven for 8 to 10 minutes, or until the edges start to brown but the centers are still soft.
- Cool and Serve: Once baked, allow the cookies to cool on the baking sheet for about 5 minutes to help them firm up before moving. Then transfer the cookies to a wire rack to cool completely.
Notes
- Do not overmix the dough to keep the cookies tender.
- Spacing dough balls about 2 inches apart allows for proper spreading during baking.
- Cool cookies on the baking sheet before transferring to avoid breaking.
- Store cookies in an airtight container to maintain freshness.
