Ingredients

Scale

Dry Ingredients

  • 4 1/2 cups all-purpose flour
  • 1 tablespoon baking powder (heaping)
  • 1 teaspoon baking soda
  • 3 teaspoons sugar
  • 1 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves

Wet Ingredients

  • 1 cup cold butter
  • 1/2 cup grated apple
  • 1 cup buttermilk

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) and prepare a baking sheet or a cast iron skillet by lightly greasing or lining it to prevent sticking.
  2. Mix Dry Ingredients: In a medium mixing bowl, combine the all-purpose flour, baking powder, baking soda, sugar, salt, ground cinnamon, nutmeg, ginger, and cloves. Stir well to evenly distribute the spices.
  3. Cut in Butter and Apples: Add the cold butter and grated apples into the dry mixture. Using a pastry cutter or your fingers, cut the butter and apples into the flour mixture until it forms coarse crumbs with visible bits of butter and apple.
  4. Add Buttermilk: Pour in the buttermilk gradually and stir gently until the dough just begins to come together. Avoid overmixing to keep the biscuits tender.
  5. Knead Dough: Lightly flour your work surface and place the dough on it. Gently knead it a few times until the dough reaches about 1 to 1 1/2 inches in thickness.
  6. Cut Biscuits: Using a 3-inch biscuit cutter, cut the dough into rounds and arrange them on the prepared baking sheet or skillet, spaced slightly apart to allow for rising.
  7. Bake: Bake in the preheated oven for 15 to 20 minutes or until the biscuits turn lightly golden brown on top. Remove from oven and serve warm for the best flavor and texture.

Notes

  • Make sure the butter is very cold to create flaky layers in the biscuits.
  • Grate the apple finely to distribute moisture evenly without making the dough too wet.
  • Do not overwork the dough to keep biscuits tender and light.
  • Serve fresh and warm, optionally with butter, honey, or jam.
  • Leftover biscuits can be stored in an airtight container and reheated gently.
