Chicken
- 2 large chicken breasts, sliced lengthwise
- Salt & pepper, to taste
- 1/2 teaspoon garlic powder
- Flour, for dredging
Sauce and Vegetables
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/4 cup chicken broth or dry white wine
- 1 heaping teaspoon Dijon mustard
- 1 cup heavy/whipping cream
- 2 cups loosely packed fresh baby spinach
- 1/4 cup sun-dried tomatoes
- 1 tablespoon fresh basil, chopped
- Prepare the chicken: Slice the chicken breasts in half lengthwise to create thinner cutlets. Season both sides with salt, pepper, and garlic powder. Lightly coat each piece in flour, shaking off any excess.
- Cook the chicken: Heat olive oil and butter together in a skillet over medium-high heat until hot and melted. Add the floured chicken pieces and cook for 4-5 minutes on each side until golden brown and cooked through. Remove chicken from the pan and set aside.
- Deglaze the pan: Pour the chicken broth or dry white wine into the hot skillet along with the Dijon mustard. Scrape the bottom of the pan to loosen any browned bits, then let the mixture simmer for 1-2 minutes to reduce slightly.
- Make the sauce and finish cooking: Stir in the heavy cream, fresh spinach, and sun-dried tomatoes. Return the cooked chicken pieces to the pan and simmer everything together for about 5 minutes, until the chicken is fully cooked through and the sauce has thickened a bit.
- Add fresh basil and season: Stir chopped fresh basil into the sauce. Taste and adjust seasoning with additional salt and pepper if needed. Serve the creamy Tuscan chicken hot immediately.
Notes
- Use dry white wine instead of chicken broth for a deeper flavor if preferred.
- Sun-dried tomatoes packed in oil can be drained before use or chopped finely for easier mixing.
- Serve this dish with creamy mashed potatoes, pasta, or crusty bread to soak up the delicious sauce.
- Fresh basil enhances the flavor, but it can be substituted with dried basil if necessary.
