Instructions

  1. Sauté onion: Heat olive oil and butter in a Dutch oven or large soup pot over medium-high heat. Add the finely chopped onion and sauté for 5 minutes until softened and translucent.
  2. Add garlic: Stir in the minced garlic and cook for about 30 seconds, releasing its aroma without burning.
  3. Deglaze with wine: Pour in the dry white wine and let it bubble for 30 seconds to reduce slightly and intensify flavor.
  4. Add tomato paste and seasoning: Stir in tomato paste and Italian seasoning, mixing well to combine all flavors.
  5. Add liquids and orzo: Pour in the chicken broth and heavy cream, then add the uncooked orzo. Increase heat to high and stir well to dissolve the tomato paste.
  6. Cook the orzo: Once the mixture boils, reduce heat to maintain a gentle simmer. Cook uncovered for about 10 minutes, stirring often to prevent sticking, until orzo is tender and the sauce begins to thicken.
  7. Finish with chicken and cheese: Stir in the cooked chicken, freshly grated Parmesan cheese, and torn fresh basil leaves. Remove the pot from the heat and cover for 3-5 minutes to allow the sauce to thicken further and flavors to meld.
  8. Season and serve: Taste and season with salt and pepper as needed. Serve immediately for a warm, creamy tomato orzo with chicken dish.
