Ingredients

Scale

Main Ingredients

  • 1 lb boneless skinless chicken breast, diced
  • 3 cups cooked rice
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) low-fat cream of chicken soup
  • 1 cup reduced-fat shredded cheese, divided
  • 1/2 cup nonfat Greek yogurt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Optional Ingredients

  • Breadcrumbs for topping
  • Fresh parsley for garnish

Instructions

  1. Preheat oven and prepare baking dish: Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish to prevent sticking and help with easy cleanup.
  2. Mix filling ingredients: In a large bowl, combine the cooked rice, steamed broccoli florets, diced chicken, low-fat cream of chicken soup, nonfat Greek yogurt, half of the shredded cheese, onion powder, garlic powder, salt, and pepper. Stir well until all ingredients are evenly incorporated.
  3. Assemble casserole: Spread the mixture evenly into the prepared baking dish. This forms the base layer of your casserole.
  4. Add cheese and optional topping: Sprinkle the remaining cheese over the top of the mixture. If you like a crispy crust, evenly sprinkle breadcrumbs on top of the cheese.
  5. Bake the casserole: Place the dish in the preheated oven and bake uncovered for 25 to 30 minutes, or until the cheese is melted and bubbly, and the chicken reaches a safe internal temperature of 165°F (74°C).
  6. Rest and garnish: Let the casserole rest for 5 minutes after baking to allow it to set. Garnish with fresh parsley if desired before serving.

Notes

  • You can use freshly cooked rice or leftover rice for convenience.
  • Steaming the broccoli ahead prevents overcooking during baking.
  • To make it gluten-free, omit the breadcrumbs or use gluten-free breadcrumbs.
  • Reducing salt can be done by using low-sodium cream of chicken soup.
  • For extra creaminess, add a splash of milk or cream to the mixture if desired.
