Ingredients

Scale

Chicken and Seasoning

  • 2 tablespoons olive oil
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Sauce

  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon crushed red pepper flakes

Base

  • 2 cups cooked white rice
  • 8 oz angel hair pasta, cooked and drained
  • 1 cup shredded mozzarella cheese

Garnish

  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking and ensure easy cleanup.
  2. Cook Chicken: Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Add the chicken to the skillet and cook for 5-7 minutes on each side, until golden brown and cooked through.
  3. Make Sauce: Remove the chicken from the skillet and set aside. In the same skillet, combine heavy cream, chicken broth, sour cream, Parmesan cheese, dried basil, dried parsley, and crushed red pepper flakes. Whisk together and bring to a simmer, cooking for 5 minutes until the sauce thickens slightly.
  4. Assemble Casserole: Place cooked white rice and angel hair pasta evenly in the prepared baking dish. Arrange the cooked chicken breasts over the rice and pasta.
  5. Add Sauce and Cheese: Pour the creamy sauce over the chicken and rice mixture. Sprinkle shredded mozzarella cheese evenly on top.
  6. Bake: Bake the casserole in the preheated oven for 25-30 minutes, until the cheese is melted, bubbly, and lightly golden.
  7. Garnish and Serve: Remove from oven and garnish with chopped fresh parsley before serving for a fresh, colorful finish.

Notes

  • For juicier chicken, consider marinating the chicken breasts beforehand.
  • Use freshly grated Parmesan for the best flavor.
  • You can substitute angel hair pasta with orzo or small shell pasta if preferred.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
  • Adjust crushed red pepper flakes to your spice preference or omit for milder flavor.
