4.5 from 138 reviews

This Classic Crockpot Pierogi Casserole with Kielbasa is a comforting and hearty dish perfect for easy weeknight dinners. It combines cheesy pierogies, flavorful kielbasa, and a creamy cheese sauce, all slow-cooked to perfection in a crockpot. The result is a rich, savory casserole with melted cheddar cheese throughout and a creamy topping that melds all the flavors beautifully.

Ingredients

Scale

For the casserole:

  • 3 packages Mrs. T’s cheddar pierogies (about 24 oz total)
  • 1 lb kielbasa, sliced
  • 3 cups chicken broth
  • 1 cup shredded cheddar cheese
  • Salt and pepper, to taste

For the cheese sauce:

  • 1 block (8 oz) cream cheese
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese

Instructions

  1. Combine Pierogies, Kielbasa, Broth, and Cheese in Crockpot: In a 4-6 quart crockpot, add the frozen Mrs. T’s cheddar pierogies, sliced kielbasa, 3 cups of chicken broth, and 1 cup shredded cheddar cheese. Stir gently to distribute ingredients evenly and season with salt and pepper to taste.
  2. Slow Cook the Casserole: Cover and set the crockpot to cook on high for 3-4 hours or on low for 6 hours. This allows the pierogies and kielbasa to absorb the flavors of the broth and cheese, creating a rich, hearty casserole. Cooking on low is recommended for deeper flavor development.
  3. Prepare the Cream Cheese Mixture: About 30 minutes before the casserole finishes, soften 8 oz cream cheese with 1 cup chicken broth in a microwave-safe bowl or on the stovetop over low heat. Whisk until smooth and lump-free.
  4. Add Cream Cheese Mixture and Finish Cooking: Pour the cream cheese mixture into the crockpot and stir gently to combine. Sprinkle the remaining 1 cup shredded cheddar cheese evenly on top. Cover and cook on low for 30 more minutes, allowing the cheese to melt and flavors to meld.
  5. Serve the Casserole: When the casserole is bubbling and cheese on top is melted, spoon it onto plates while hot. Optionally garnish with sliced green onions for extra color and fresh flavor. Enjoy!

Notes

  • Cooking on low for 6 hours brings out deeper flavors, but high for 3-4 hours works for a shorter cook time.
  • You can add sliced green onions as a garnish for freshness.
  • Ensure the cream cheese is fully softened before whisking to avoid lumps in the sauce.
  • Use a 4-6 quart crockpot to prevent overflow and ensure even cooking.
  • For a spicier version, add a pinch of chili flakes or smoked paprika.
