Ingredients

Scale

Dry Ingredients

  • ½ cup oats
  • 2 scoops vanilla protein powder (2 ounces)
  • 1 teaspoon Stevia
  • 1 teaspoon baking powder
  • 1 tablespoon cinnamon

Wet Ingredients

  • 2 egg whites (2 ounces or 6 tablespoons)
  • ⅔ cup water

Instructions

  1. Preheat Oven: Preheat the oven to 390°F (200°C) to get it ready for baking the protein cake.
  2. Blend Ingredients: Blend the oats, egg whites, water, vanilla protein powder, Stevia, and baking powder until the mixture is smooth and has a thick pancake batter consistency. Do not add cinnamon yet.
  3. Pour Batter (First Layer): Pour half of the batter into a small (about 4.5 inches across) nonstick pan, evenly spreading it out.
  4. Add Cinnamon Swirl: Sprinkle the tablespoon of cinnamon over the first layer of batter to create the cinnamon swirl effect.
  5. Pour Batter (Second Layer): Pour the remaining batter on top, covering the cinnamon layer.
  6. Create Swirl: Use a knife to gently pull through the batter a few times to swirl the cinnamon slightly into the top layer.
  7. Bake: Bake in the preheated oven for 12 minutes until the cake is set and cooked through.
  8. Rest and Serve: Let the cake rest for a few minutes after baking to cool slightly before slicing and serving.

Notes

  • Ensure not to over blend the batter to maintain some texture from the oats.
  • Use a small nonstick pan about 4.5 inches across for the best shape and bake time.
  • Adjust cinnamon amount to taste if you prefer a stronger or milder cinnamon flavor.
  • This recipe can be customized with different protein powder flavors if desired.
  • Let the cake rest fully to make slicing easier and to enhance flavor.
