Ingredients

Scale

Base

  • 1 1/2 cups (135g) Rolled Oats
  • 1/2 cup (60g) All-Purpose Flour
  • 1/4 cup (50g) Brown Sugar
  • 1/4 cup (57g) Melted Butter
  • 1/4 tsp (1.5g) Salt

Filling

  • 1/4 cup (50g) Brown Sugar
  • 1/4 cup (57g) Softened Butter
  • 1 tbsp (8g) Ground Cinnamon

Glaze

  • 1/2 cup (60g) Powdered Sugar
  • 12 tbsp (15-30ml) Milk
  • 1/4 tsp (1.25ml) Vanilla Extract

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper to prevent sticking.
  2. Make the oat base: In a bowl, combine rolled oats, all-purpose flour, 1/4 cup brown sugar, melted butter, and salt. Mix thoroughly until a uniform mixture forms.
  3. Press the base: Firmly press the oat mixture into the bottom of the prepared baking pan to form an even base layer.
  4. Prepare the cinnamon filling: In another bowl, cream together softened butter, 1/4 cup brown sugar, and ground cinnamon until smooth and well combined.
  5. Spread the filling: Evenly spread the cinnamon sugar mixture over the oat base. Optionally, use a knife to swirl gently for a marble effect.
  6. Bake the bars: Place the pan in the oven and bake for 20-25 minutes, or until the edges turn golden brown and the center is set.
  7. Make the glaze: While the bars are cooling, whisk powdered sugar, milk, and vanilla extract together in a small bowl. Adjust milk quantity to achieve desired glaze consistency.
  8. Glaze the bars: Drizzle the glaze evenly over the cooled oatmeal bars.
  9. Serve: Allow the glaze to set completely, then cut into 9 squares and enjoy.

Notes

  • Ensure the butter used in the filling is softened for easy mixing.
  • Press the base firmly into the pan for a sturdy bar that holds together well.
  • Adjust the amount of milk in the glaze to make it thicker or thinner, depending on your preference.
  • Store leftover bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
  • For a nuttier flavor, consider adding chopped nuts to the base or filling.
