Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or prepare five mini loaf pans by greasing or lining them with parchment paper for easy removal.
  2. Mix wet ingredients: In a medium-sized bowl, combine the applesauce, sugar, vegetable oil, eggs, and milk. Whisk these together until fully blended and smooth.
  3. Add dry ingredients: Gradually add the flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice, and salt to the wet mixture. Stir gently to combine, making sure not to overmix; the batter should be just combined with some small lumps allowed.
  4. Pour batter into pans: Transfer the batter into the prepared loaf pan or divide it evenly among the mini loaf pans, smoothing the tops lightly.
  5. Bake the bread: Place the pan(s) into the preheated oven. Bake mini loaves for about 30 minutes, or the large loaf for approximately 60 minutes. Check doneness by inserting a toothpick into the center; it should come out clean or with a few moist crumbs.
