Ingredients

Scale

Main Ingredients

  • 1 cup heavy cream
  • 8 oz dark chocolate (60–70% cocoa), chopped
  • 2 tbsp unsalted butter
  • 1 tsp vanilla extract
  • 1 pinch salt

Optional Toppings

  • Cocoa powder
  • Chopped nuts
  • Shredded coconut
  • Chocolate sprinkles
  • Melted chocolate

Instructions

  1. Chop Chocolate: Finely chop the dark chocolate and place it in a heatproof bowl to prepare for melting.
  2. Heat Cream: In a small saucepan, heat the heavy cream over medium heat until it begins to simmer, making sure not to let it boil.
  3. Combine Cream and Chocolate: Pour the hot cream over the chopped chocolate and let it sit for 2 to 3 minutes to soften the chocolate.
  4. Mix Ganache: Stir the mixture gently until smooth and glossy. Add the unsalted butter, vanilla extract, and a pinch of salt, then mix until fully combined.
  5. Chill Ganache: Cover the bowl and refrigerate the ganache for 1.5 to 2 hours, or until it is firm enough to scoop.
  6. Form Truffles: Using your hands or a small cookie scoop, scoop and roll the ganache into 1-inch balls.
  7. Add Toppings: Roll each truffle in your choice of toppings such as cocoa powder, chopped nuts, shredded coconut, chocolate sprinkles, or dip in melted chocolate for a smooth coating.
  8. Final Chill: Place the coated truffles back in the refrigerator and chill for an additional 10 to 15 minutes before serving or packaging for storage.

Notes

  • The quality of chocolate significantly affects the flavor; choose high-quality dark chocolate for best results.
  • Make sure not to overheat the cream to prevent burning or curdling.
  • Use gloves or lightly buttered hands when rolling to prevent sticking.
  • Store truffles in an airtight container in the refrigerator for up to two weeks.
  • For a firmer texture, you can chill the ganache overnight.
