Fondant Dough
- 6 tablespoons unsalted butter, at room temperature
- 6 tablespoons light corn syrup
- ½ teaspoon kosher salt
- 4 cups powdered sugar
Filling
- About 60 maraschino cherries, stems removed
Chocolate Coating
- 4 ounces unsweetened chocolate
- 12 ounces semi-sweet chocolate chips (recommended: Guittard)
- 1 piece (1″x2″x3/4″) of paraffin, found in the baking aisle
- Prepare Fondant Dough: In a bowl, mix together the unsalted butter, light corn syrup, kosher salt, and powdered sugar until the mixture becomes smooth and cohesive.
- Knead Dough: Using your hands, knead the mixture into a smooth dough. If the dough feels too soft or sticky, refrigerate it briefly to firm up.
- Wrap the Cherries: Take each maraschino cherry and wrap it with a flattened circle of the prepared dough, ensuring it is fully covered.
- Chill Wrapped Cherries: Place the wrapped cherries on a cookie sheet lined with wax paper and chill them for at least 2 hours or preferably overnight to set properly.
- Prepare Cherries for Dipping: Drain the maraschino cherries well and pat them dry on paper towels to remove excess moisture before dipping.
- Melt Chocolate Coating: Over simmering water (double boiler), melt the unsweetened chocolate, semi-sweet chocolate chips, and the piece of paraffin wax together until smooth and glossy.
- Dip Cherries in Chocolate: Using forks, dip each wrapped cherry thoroughly into the melted chocolate mixture, ensuring even coverage.
- Set Coated Cherries: Remove excess chocolate by gently tapping and place each cherry on wax paper to cool and harden at room temperature.
Notes
- Use paraffin wax to give the chocolate coating a smooth, shiny finish and a better texture.
- Ensure cherries are well drained and dried before wrapping and dipping to prevent sogginess.
- You can substitute semi-sweet chocolate with dark chocolate for a richer flavor.
- Store the finished cordials in a cool, dry place; refrigeration can cause the coating to sweat.
- Paraffin wax can be found in the baking aisle of grocery stores or specialty baking shops.
