  • 1 piece (1″x2″x3/4″) of paraffin, found in the baking aisle

Instructions

  1. Prepare Fondant Dough: In a bowl, mix together the unsalted butter, light corn syrup, kosher salt, and powdered sugar until the mixture becomes smooth and cohesive.
  2. Knead Dough: Using your hands, knead the mixture into a smooth dough. If the dough feels too soft or sticky, refrigerate it briefly to firm up.
  3. Wrap the Cherries: Take each maraschino cherry and wrap it with a flattened circle of the prepared dough, ensuring it is fully covered.
  4. Chill Wrapped Cherries: Place the wrapped cherries on a cookie sheet lined with wax paper and chill them for at least 2 hours or preferably overnight to set properly.
  5. Prepare Cherries for Dipping: Drain the maraschino cherries well and pat them dry on paper towels to remove excess moisture before dipping.
  6. Melt Chocolate Coating: Over simmering water (double boiler), melt the unsweetened chocolate, semi-sweet chocolate chips, and the piece of paraffin wax together until smooth and glossy.
  7. Dip Cherries in Chocolate: Using forks, dip each wrapped cherry thoroughly into the melted chocolate mixture, ensuring even coverage.
