Ingredients

Scale

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • ½ cup milk (or almond milk for dairy-free)
  • 3 tbsp butter (or olive oil for vegan option)
  • Salt and pepper to taste

For the Chicken:

  • 2 boneless, skinless chicken breasts (or thighs)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp thyme
  • Salt and pepper to taste

Optional Toppings:

  • Gravy (homemade or store-bought)
  • Shredded cheese (cheddar or mozzarella)
  • Steamed broccoli or roasted vegetables
  • Green onions or chives for garnish

Instructions

  1. Cook the Chicken: Season the chicken breasts with salt, pepper, garlic powder, paprika, and thyme. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until the outside is golden brown and the internal temperature reaches 165°F (74°C). Remove from heat and let rest for 5 minutes before slicing into strips.
  2. Make the Mashed Potatoes: Place peeled and cubed potatoes into salted boiling water and cook for 15-20 minutes or until tender when pierced with a fork. Drain thoroughly and mash the potatoes with milk, butter, salt, and pepper until smooth and creamy.
  3. Assemble the Bowls: Spoon the mashed potatoes evenly into serving bowls. Layer sliced chicken strips on top of the mashed potatoes. Drizzle with warm gravy and add any optional toppings such as shredded cheese, steamed broccoli, or chopped green onions for extra flavor and texture.
  4. Serve & Enjoy: Serve the bowls immediately while hot to enjoy the creamy potatoes and savory chicken at their best. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently before serving.

Notes

  • For a vegan version, substitute chicken with plant-based alternatives like tofu or seitan, and use olive oil instead of butter.
  • Low-fat variation can be made by using Greek yogurt instead of butter and opting out of cheese toppings.
  • Keto dieters can swap potatoes for mashed cauliflower to reduce carbohydrates.
  • Extra protein can be added by including a fried egg or additional shredded chicken on top.
  • Ensure chicken is fully cooked to 165°F for food safety.
  • The dish is best eaten fresh but stores well in the fridge for up to 3 days.
