This comforting Cheese Steak Soup blends tender beef sirloin with sautéed vegetables, rich beef broth, creamy heavy cream, and melted provolone cheese, making it a perfect cozy night meal that’s hearty and flavorful.

Ingredients

Scale

Meat

  • 1 pound Beef Sirloin (flank steak or ribeye can also be used)

Vegetables

  • 1 medium Onion (yellow or white onions work as substitutes)
  • 1 medium Green Bell Pepper (red or yellow bell peppers can be used)
  • 3 cloves Garlic (fresh cloves preferred)

Liquids & Dairy

  • 2 tablespoons Olive Oil (vegetable oil as substitute)
  • 4 cups Beef Broth (ensure gluten-free if necessary)
  • 1 cup Heavy Cream (half-and-half as a lighter option)
  • 1 cup Shredded Provolone Cheese (mozzarella or mild cheddar as alternatives)

Seasoning

  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Warm the Oil: In a large pot over medium heat, warm the olive oil until it shimmers, indicating it’s ready for cooking.
  2. Sear the Beef: Add the beef sirloin to the pot and sauté it until browned, about 5-7 minutes. Once browned, remove the beef and set it aside to keep the flavors concentrated.
  3. Sauté Vegetables: In the same pot, add the chopped onions, bell pepper, and minced garlic. Cook them until they become tender and fragrant, which should take roughly 4-5 minutes, stirring occasionally to prevent sticking.
  4. Simmer with Broth: Return the browned beef to the pot. Pour in the beef broth and bring the mixture to a simmer. Let it cook gently for 15 minutes so the flavors meld beautifully together.
  5. Add Cream and Cheese: Stir in the heavy cream and shredded provolone cheese into the simmering soup. Continue stirring until the cheese is completely melted and the soup is creamy, about 3-4 minutes.
  6. Season and Serve: Taste the soup and season with salt and pepper according to your preference. Serve the soup hot in bowls for a satisfying meal.

Notes

  • You can substitute flank steak or ribeye for sirloin based on availability and preference.
  • Vegetable oil can replace olive oil if needed.
  • Yellow or white onions and different colored bell peppers are acceptable swaps without changing the flavor profile drastically.
  • Half-and-half can lighten the soup while maintaining creaminess if heavy cream feels too rich.
  • Mozzarella or mild cheddar cheeses can be used as alternatives to provolone, though provolone offers the most authentic flavor.
  • Ensure beef broth is gluten-free if dietary restrictions require it.
