Ingredients

Scale

Roast Beef Mixture

  • 18 oz deli roast beef slices, chopped
  • 1 red onion, diced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 tablespoon chopped garlic
  • 1/2 tablespoon steak spice
  • 2 x 10.5 oz cans cheddar soup
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese

Biscuit Topping

  • 1 box Cheddar Bay biscuit mix
  • 1 cup shredded cheddar cheese
  • 2 cups milk
  • 1/4 cup butter, melted
  • Seasoning packet from biscuit mix box

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cobbler.
  2. Cook Roast Beef: Place chopped roast beef into a large skillet over medium-high heat. Stir and cook for a couple of minutes to warm the meat.
  3. Add Vegetables: Add the diced red onion, green bell pepper, and red bell pepper to the skillet.
  4. Sauté Vegetables: Stir well and continue cooking until the peppers and onions have softened, about 4-5 minutes.
  5. Add Garlic and Seasoning: Stir in the chopped garlic and steak spice. Continue cooking for 3 minutes to release flavors.
  6. Add Cheese Soup Mixture: Reduce heat to low, then add both cans of cheddar soup and 1/2 cup milk to the skillet. Stir well to combine.
  7. Mix in Cheese: Add 1 1/2 cups shredded cheddar cheese to the mixture and stir until melted. Remove skillet from heat.
  8. Prepare Baking Dish: Spray a 9 x 13 inch baking dish thoroughly with cooking spray for easy cleanup.
  9. Add Beef Mixture: Pour the roast beef and cheese mixture into the baking dish and spread evenly.
  10. Prepare Biscuit Batter: In a mixing bowl, pour the biscuit mix, reserving the seasoning packet. Add 1 cup shredded cheddar cheese and 2 cups milk. Stir until no large lumps remain.
  11. Top Beef Mixture: Pour the biscuit batter evenly over the beef mixture in the baking dish.
  12. Bake Cobbler: Place the dish in the preheated oven and bake for 50 to 55 minutes, or until the biscuit topping is golden brown across the top.
  13. Butter Mix & Brush: While baking, combine melted butter and the reserved seasoning packet in a small bowl. Once baked, remove the dish from the oven and brush the butter-seasoning mixture generously over the biscuit topping.
  14. Rest and Serve: Allow the cobbler to rest for about 5 minutes so the biscuit topping soaks up the butter mixture. Serve warm and enjoy!

Notes

  • Use deli roast beef slices for easy preparation; thicker or fresh steak can be substituted but may require additional cooking time.
  • Make sure to soften peppers and onions well for best flavor and texture.
  • If cheddar soup is unavailable, substitute with a homemade cheese sauce for freshness.
  • Adjust steak spice amount to taste depending on preferred spice level.
  • Biscuit mix seasoning packet is critical for classic Cheddar Bay flavor in the topping.
  • Allow the cobbler to rest before serving to enhance flavor absorption and texture.
