Instructions

  1. Sauté Onion and Aromatics: Add the olive oil, butter, and chopped onion to a pot over medium-high heat and sauté the onion for 3-4 minutes until softened.
  2. Add Garlic and Orzo: Stir in the minced garlic and uncooked orzo pasta; cook for 2-3 minutes, stirring frequently to toast the orzo and infuse flavor.
  3. Cook Orzo in Broth: Pour in the chicken broth and bring to a gentle bubble. Reduce heat to medium or medium-low and cook uncovered for 10 minutes, stirring often. Add extra broth if the liquid evaporates too quickly before the orzo is tender.
  4. Incorporate Boursin Cheese: Stir in the softened Boursin cheese until fully melted and smooth, creating a creamy sauce.
  5. Wilt Spinach and Heat Chicken: Remove the pot from heat, stir in fresh spinach and cooked chicken, then cover the pot for 5 minutes to allow the spinach to wilt and chicken to warm.
  6. Season and Serve: Season with salt and pepper to taste and garnish with chopped fresh chives if desired before serving.
