Instructions

  1. Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5–6 minutes, stirring frequently, until the berries soften and release their juices. Lightly mash with a spoon to achieve a jam-like consistency.
  2. Cool the Compote and Add Chia Seeds: Remove the compote from heat and stir in chia seeds if using. Let the mixture cool completely to prevent melting the yogurt during assembly.
  3. Make the Yogurt Base: In a medium bowl, whisk together Greek yogurt, vanilla extract, and honey until smooth and creamy. Taste and adjust sweetness as desired to balance the tartness of the yogurt.
  4. Assemble the Bites: Spoon about 1 tablespoon of the yogurt mixture into each cavity of a silicone mini muffin tray or ice cube tray, filling it about ¾ full.
  5. Add the Blueberry Swirl: Place ½ teaspoon of the cooled blueberry compote on top of the yogurt in each cavity. Use a toothpick, skewer, or knife tip to gently swirl the compote through the yogurt for a marbled effect.
