Blueberry Compote
- ¾ cup (100g) fresh or frozen blueberries
- 1 teaspoon lemon juice
- 1 teaspoon honey (optional, for extra sweetness)
- 1 teaspoon chia seeds (optional, for texture and fiber)
Yogurt Base
- 1½ cups (370g) plain Greek yogurt (2% or full-fat for extra creaminess)
- 1 tablespoon honey or maple syrup (or erythritol for a keto-friendly version)
- ½ teaspoon vanilla extract
- Prepare the Blueberry Compote: In a small saucepan over medium heat, combine the blueberries, lemon juice, and optional honey. Cook for 5–6 minutes, stirring frequently, until the berries soften and release their juices. Lightly mash with a spoon to achieve a jam-like consistency.
- Cool the Compote and Add Chia Seeds: Remove the compote from heat and stir in chia seeds if using. Let the mixture cool completely to prevent melting the yogurt during assembly.
- Make the Yogurt Base: In a medium bowl, whisk together Greek yogurt, vanilla extract, and honey until smooth and creamy. Taste and adjust sweetness as desired to balance the tartness of the yogurt.
- Assemble the Bites: Spoon about 1 tablespoon of the yogurt mixture into each cavity of a silicone mini muffin tray or ice cube tray, filling it about ¾ full.
- Add the Blueberry Swirl: Place ½ teaspoon of the cooled blueberry compote on top of the yogurt in each cavity. Use a toothpick, skewer, or knife tip to gently swirl the compote through the yogurt for a marbled effect.
- Freeze: Place the tray flat in the freezer and freeze for at least 2 hours or until the bites are firm.
- Serve and Store: Carefully remove the bites from the silicone molds. If the mold is hard, let the bites sit at room temperature for a few minutes for easier removal. Store in an airtight container in the freezer. Thaw for 2–4 minutes before serving for a creamy texture.
Notes
- Use full-fat Greek yogurt for a creamier texture and richer flavor.
- Blueberry compote can be made ahead and stored in the refrigerator for up to 2 days.
- For a keto-friendly version, substitute honey with erythritol or another low-carb sweetener.
- Silicone molds work best for easy removal, but if using harder molds, allow bites to soften slightly at room temperature before unmolding.
- Optional chia seeds add fiber and texture while helping the compote set into a gel-like consistency when frozen.
- Feel free to experiment with other fruit compotes like raspberry or strawberry.
