Chicken Mixture

- Preheat the Oven and Prepare Filling: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine shredded chicken, softened cream cheese, Buffalo sauce, and thinly sliced scallions. Season the mixture with kosher salt and freshly ground black pepper to taste, mixing everything until well incorporated.
- Prepare Tortilla Cones: In a separate medium bowl, mix the shredded cheddar and Monterey Jack cheeses together. Cut each small flour tortilla in half. On one tortilla half, sprinkle about 1 tablespoon of the cheese mixture, then add roughly 1 tablespoon of the chicken mixture in the center. Starting from the cut edge, fold the bottom quarter of the tortilla into a triangle shape and continue rolling it up into a cone. Repeat this process for all tortilla halves, using some of the cheese mixture reserved for later layers.
- Arrange the Quesadilla Ring: Place a 3-inch-wide cup or bowl in the center of the parchment-lined baking sheet to serve as a guide. Arrange the rolled tortillas with the smaller pointed ends against the cup, forming a ring. Sprinkle some of the reserved cheese mixture over the tops of the arranged tortillas. Create two more layers on top, repeating the arrangement and sprinkling cheese between layers. Once completed, carefully remove the cup from the center, leaving a ring shape.
- Bake Until Golden and Melted: Bake the quesadilla ring in the preheated oven for 20 to 25 minutes, or until the cheese is melted and bubbly and the centers of the cones are warmed through.
