Ingredients

Scale

For the Base:

  • 2 flatbreads (lavash, pita, or pre-made pizza crust)

For the Topping:

  • 200 g cooked or roasted chicken (shredded)
  • 45 tbsp your favorite BBQ sauce
  • 100 g shredded mozzarella cheese (or a mix of cheddar and mozzarella)
  • 1 small red onion (thinly sliced)
  • 1 small sweet pepper (thinly sliced, optional)
  • 12 tbsp chopped fresh cilantro or parsley (for garnish)

For Serving (Optional):

  • Sour cream or Greek yogurt
  • Lime wedges

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (390°F). Prepare a baking sheet lined with parchment paper and place the flatbreads on it.
  2. Mix Chicken and BBQ Sauce: In a bowl, combine the shredded chicken with 3 tablespoons of BBQ sauce. Let it sit for 5 minutes to allow flavors to meld.
  3. Spread BBQ Sauce on Flatbreads: Evenly spread approximately 1 tablespoon of BBQ sauce on each flatbread as a flavorful base layer.
  4. Add BBQ Chicken: Distribute the BBQ-coated shredded chicken evenly over each flatbread.
  5. Top with Cheese: Sprinkle shredded mozzarella cheese (or a cheddar-mozzarella mix) evenly over the chicken layer.
  6. Add Vegetables: Place thinly sliced red onion and sweet pepper (if using) on top of the cheese.
  7. Bake: Place the flatbreads in the preheated oven and bake for 10-12 minutes until the cheese melts, turns lightly golden, and the flatbread edges become crispy.
  8. Cool Slightly: Remove from the oven and let the flatbreads cool slightly before serving.
  9. Garnish and Serve: Sprinkle chopped fresh cilantro or parsley over the flatbreads. Optionally serve with sour cream or Greek yogurt and lime wedges.

Notes

  • You can use lavash, pita, or any pre-made pizza crust as flatbread bases.
  • Adjust BBQ sauce amount to taste; use your favorite brand or homemade sauce.
  • Sweet pepper is optional but adds a nice crunch and sweetness.
  • For extra flavor, you can add a sprinkle of smoked paprika or chili flakes before baking.
  • Leftover flatbread can be stored wrapped in foil and reheated in the oven.
