Gammon Joint

  • 750 g gammon joint

Glaze

  • 1 tbsp dijon mustard
  • 1 tbsp wholegrain mustard
  • 2 tbsp honey
  • 1 tbsp dark brown sugar

Instructions

  1. Prepare the gammon: Remove the gammon joint from the fridge and all its packaging, including the string, about 30 minutes before cooking to let it come to room temperature for even cooking.
  2. Make the glaze: In a bowl, mix together dijon mustard, wholegrain mustard, honey, and dark brown sugar until fully combined to create a flavorful glaze.
  3. Score the fat: Use a sharp knife to carefully remove the skin from the gammon joint, leaving a thin layer of fat. Score this fat in a diamond pattern to help it crisp up nicely during cooking.
  4. Prepare for air frying: Line the air fryer basket with a large piece of foil and place the gammon joint in the center. Pour over the glaze and turn the joint to ensure it is completely covered in the glaze.
  5. Seal and cook: Fold the foil securely around the gammon to make a parcel. Air fry at 180°C (356°F) for 50 minutes. Halfway through cooking, carefully unwrap the parcel, turn the gammon over, then re-wrap and continue cooking for the remaining time.
  6. Crisp the fat: After the initial cooking, open the air fryer and unwrap the gammon. Return it to the air fryer and cook for a further 10 minutes uncovered to crisp up the fat layer. The gammon is done when the internal temperature reaches at least 70°C (160°F).
  7. Rest and serve: Remove the gammon from the air fryer and let it rest for 10-15 minutes before carving. Spoon off any excess fat from the glaze if desired and serve as a delicious sauce alongside the sliced gammon.
