Ingredients

Scale

Sweet Potatoes

  • 2 small to medium-sized sweet potatoes
  • 12 teaspoons olive oil

Whipped Cinnamon Butter

  • ½ cup softened salted butter (1 stick)
  • ¼ teaspoon ground cinnamon
  • 4 teaspoons brown sugar (adjust for desired sweetness)
  • Large pinch of salt

Instructions

  1. Make whipped cinnamon butter. In a medium bowl, combine the softened butter, ground cinnamon, brown sugar, and a large pinch of salt. Stir vigorously using a large spoon or mix with a hand mixer until the mixture is smooth, creamy, and fully blended. Adjust the sweetness or saltiness to your taste preference.
  2. Shape and chill the butter. Spoon the whipped cinnamon butter onto a piece of plastic wrap. Roll the plastic wrap around the butter to form a log shape, then twist the ends securely. Place the log in the refrigerator to chill and firm up before slicing and serving with your sweet potatoes. Alternatively, cover the bowl directly and refrigerate until ready to use.
  3. Prepare sweet potatoes for air frying. Rinse and scrub the sweet potatoes under cold water to remove dirt and debris. Pat them dry completely with paper towels. Lightly rub each potato with olive oil, then prick each one a few times with a fork to allow steam to escape during cooking.
  4. Air fry the sweet potatoes. Place the prepared sweet potatoes in the air fryer basket in a single layer. Set the air fryer to 380°F (193°C) and cook for 30 to 45 minutes; smaller potatoes will take about 30-35 minutes, and larger ones about 40-45 minutes. The sweet potatoes are done when a thin knife or skewer easily pierces through to the center.
  5. Serve. Let the potatoes cool slightly after cooking. Then slice each in half lengthwise and fluff the insides gently with a fork. Serve immediately topped with slices of the chilled whipped cinnamon butter for a deliciously warm and sweet finish.

Notes

  • Cooking times may vary depending on the size and thickness of your sweet potatoes; adjust accordingly.
  • You can substitute brown sugar with maple syrup or honey for a different sweetener, adjusting quantities to taste.
  • If you prefer savory over sweet, omit the cinnamon and brown sugar from the butter and add herbs instead.
  • Ensure sweet potatoes are dry before air frying for the best skin texture.
  • Leftover whipped cinnamon butter can be stored tightly wrapped in the refrigerator for up to one week.
